Recent gluten free/allergy dining experiences?

I've seen some older threads, just wondering if anyone has any recent experiences that they care to share. We're headed to Universal for the first time in August and my 10 year old son was recently diagnosed with Crohn's Disease. He is currently off all dairy, gluten, wheat and corn (corn syrup, HFCS, etc.) and I'm wondering how difficult it will be to feed him.

I would give them a call and personally talk with the head chef. He will give you some excellent ideas on what you can expect.

I'd love to hear about your experiences! My son has a corn allergy and we're hoping to plan a Universal/Legoland trip sometime soon.
