So we are headed to WDW tomorrow and we booked with a travel agent. We want to add the quick dining service for our stay but haven't done it yet for reasons I won't go into.

Can it be added when we check in to our resort?

You are out of luck. It has to be added 72 hrs before check in. You could call your TA and see if they can work any magic, but I'd say they have about a 5-10% chance of doing so.

you can pay with your magic band and every night pay off your balance with cash or gift cards at the hotel concierge if going cash free is the intention, Have a great trip!

Actually it's 72 hrs unless you are DVC and even for them it's 48 hrs.
