Ready to book. But.. What if Free Dinning Comes out when for our dates ?

I am ready to book our trip for January 2014,

I am almost 100% - that we are going to book, for AOA Lion King Family suite, with DDXDP - and tickets. Or... POFQ with DDXDP - and tickets

So if I go ahead and book and Free Dinning is offered, what do I do to get the free dinning included, and upgrade to DDXDP.

Will I have to cancel and start over?
Or
Can they just do the change?

Any insight into how to handle this?

They can just toss the discount onto your res pending availability of your room type.
 
If FD is offered for your dates you need to call and have it applied to your current reservation as long as your dates, resort and room category are included and there is availability.

Free dining will not be offered for January 2014. It will be Play/Stay/Dine again. The pins have already gone out for it for select dates in 2014. It will probably turn into a general public offer in October.

Disney would never follow up the S/P/D promo with a free dining promo.
They know that everyone who booked the P/S/D promo would cancel/change that ressie to free dining because free dining is a much better deal.

and adults pay kids prices for the dining plan and park tickets

There's no benefit from booking early unless you plan to go with or without a discount during that time. You would still have to call in like everyone else and have the discount added to your package. You can always modify an existing reservation to have a discount added on, but you can't stack discounts....you can only have one.

As long as you are booking a package (at least room and tickets) then adding a code for a package (as long as they have availability at the resort for said discount) is no problem. If you are paid in full they will refund the difference. If you make the change inside of 45 days and the cost of your package goes down you are charged a change fee. Which I think is $50.
