I don't think Nine Dragons is a buffet though.

Yeah you're right... I don't know why I always thought it was.
 

We also like 1900 park faire (would put it after Crystal palace on my list).
 
We are not big buffet fans but of the buffets we have eaten at:

Biergarten (really like)
Chef Mickey's - breakfast (good for main characters)
Boma (did not care for)
 
- BOMA (EXCELLENT)
- Tusker House (VERY VERY GOOD)
- Cape May (something for everyone here, seafood has been frozen so not top quality, non seafood items on the bland side)
- The Crystal Palace (LOUD, ok food but nothing special)
- Hollywood and Vine (food has deteriorated over the last 15 years from really good to well-it-beats-roadkill)
- Chef Mickey's (VERY mediocre food, messy food areas, heavy on sugary foods esp. @ breakfast)
- Trail's End , never eaten there

You've missed the best IMO, The Wave's breakfast. It's the only breakfast buffet I'll go to in orlando. (I'll go to pph's character bfast in Anaheim as long as they still do the huevos rancheros)

I think it depends on the meal. but, it's interesting to read everyone's opinion. We love buffets because my daughter(now 20) is a plain eater ( go figure, Boma is her favorite). Also, it gives us a chance to try various things.
We have had
Boma dinner ( twice ) LOVED- going for third time in Dec
Crystal Palace breakfast- Enjoyed - prepark opening can't be beat
Tusker House Breakfast- was Fine but we were disappointed after all the hype- were hoping for the breakfast/lunch transition but they were running real late on starting the lunch food and we didnt want to wait- This trip we're trying lunch)

1900 PF- dinner
Biergarten - dinner

NOTE1: Results are listed from best to worst. Overall, Tusker House wins due to best food and the length of time the characters stay at each table. A close second is 1900 Park Fare. By far, Chef Mickey's is the loser, due to mediocre character interaction and almost terrible food quality. The very distant second worst is Cinderella Royal Table, for brief time at tables by characters and the new menu.

From your list I'd rank like this for dinners. For Breakfast, I'd have to say The Wave with others. Boma is a close second but for double the price.
I personally was not impressed with 1900 Park Fare for dinner. Very noisy and the food was ok.
