cheddar cheese
spread cream cheese on bottom of pan, spread salsa on top then top with cheddar cheese. Bake at 350 until cheese melts. Serve with corn chips

Pampered Chef has a great recipe for a white pizza with tomatoes. I cut it small to serve at parties. It is a huge hit. I will post it when I find it.

Grilled crab sandwiches. Best with real crab, but the fake stuff (surimi) works fine for it, too.

1 lb. crabmeat
1/4 cp dried minced onion (or fresh, if you want to do the work to mince it fine
1 tsp. good-quality sweet paprika (Szeged is good, or Penzey's.)
Salt to taste.
1 cup shredded Gruyere cheese (You can use any Swiss-type cheese; I just prefer Gruyere.)

Plain English muffins, split.

Thaw the crab if it is frozen, and drain off any liquid. Mix the shredded crabmeat with the onion and let stand for a few minutes so that the onion rehydrates. (You can skip that step w/ fresh onion). Gently mix in paprika and salt.

Spoon crab mix on half of an English muffin and top with cheese. Broil for about 5 minutes, until the cheese begins to look golden. For appetizers, slice each muffin piece in quarters.

Super easy is a jar of good Salsa and a cup of finely shredded cheese for dip.
I made cream cheese with crab wrapped in tortillas and sliced one year, they were a hit. There was more in it which I don't remember.

Here's a favorite of ours:

Mexican Corn Dip

2 11oz can of mexican corn
1 cup mayo
1 oz chopped jalapenos
8 oz pepper jack cheese, grated
1/2 cup parmesan cheese

Drain corn and mix all ingredients together in casserole dish. Bake at 350 for 30 minutes or until bubbly.

Unwrap mini peanut butter cups. Insert toothpick. Voila! (Anything becomes an appetizer once you stick a toothpick in it!)

Put 1 package cream cheese on a plate, cover it with 1 can crabmeat, drained ( you can use the kind found in the tuna fish aisle if you want ) then cover that with 1 jar cocktail sauce. Serve with crackers, this makes a very good spread.

I make something similar. I used to make this same recipe but used the tiny canned shrimp. Then I began using larger shrimp but cut them in pieces. Because of a space issue one time I mixed the cut up shrimp, cream cheese and cocktail sauce all together and served them as a dip/spread. It was a HUGE hit. I make it all the time now for appetizer events and also to take along to Trivia Nights.

im having people over tomorrow. im going to make mini-hamburgers, mini tacos by putting the meat in those tostitos scoop shape chips with a touch of salsa and cheese heated up, and slices of cucumber with feta mixed with herbs on top. i always hated cold cocktail shrimp stuff as a kid and taco dips taste good but are super messy.

This is super easy, takes seconds, and people LOVE, LOVE, LOVE it.

Boursin Cheese- unwrap and set on small plate. Small jar of pesto. Open and spoon over cheese. Serve with crackers! We like it with Carr's Tablewater crackers... but any sort of dry sturdy cracker works well...not really ritz, but if that is all you have, go for it!

This one is a hit every time I make it. It's really easy too! The only thing I do differently is I mix in 1/2 of the parm cheese into the dip, and top with the other 1/2, and then I bake it instead of microwave it. OH, YUM!

I make this all the time too! I also bake it, much better and stays warm longer! I usually omit the parmesean. Its expensive here and I don't miss it when I don't add it. I chop up jarred jalenpenos and it works great.
