I've read that your meals are counted as credits and you can save them to use for table service meals.
Does this apply if your on the quick service plan?
 
No, you seem to have gotten some misinformation.

All of the Disney dining plans deal in "credits" of various types. The quick service dining plan (QSDP) provides 2 counter service (CS), 2 table service (TS), and 2 snack credits per person, per night of the resort stay. They can be used at any time during that stay, but you can't "trade up", say 2 CS credits for a TS meal.

The "basic" dining plan (DDP) offers 1 CS, 1 TS, and 1 snack per person per night. Again, you can't "trade up" credits.

The deluxe dining plan (DxDP) offers 3 meal credits and 2 snack credits per person per night. Unlike QSDP and DDP, the DxDP meal credits can be used for either CS or TS.
 
oh right, I dont get any table service meals though, I just get 2 counter and 2 snacks and refill mug, So do you mean that i could have :
2 snacks but only 1 counter service monday
but then have 2 snacks and 3 counter service tuesday?

not that I would want all that in one day!

Yep, this is certainly possible (and within the "rules" of the plan).

I'm sure you already know, but note that the credit allotments are 2 QS, 2 Snacks per night of your stay. As such, if you were staying 5 nights (6 days), you'd receive 10 QS and 10 Snack credits.

As for using them, they are pooled and you may use them in any combination and any amount (up to the number of people on your reservation per "meal") from the minute to check in until midnight following check-out. If you felt so inclined, using the 5 night example above, you could go ahead and use all 10 QS and 10 snacks the first day you are there. Of course, WDW will not pay for your hospital bills after eating that much food... but it's still possible within the rules of the system. (And the reverse is true as well, you can save them between days just fine).

Also note that even trading down (TS to CS on DDP) is typically not allowed. They sometimes will do it (and most reported success is from Free Dining time), but not always.

Yes. You can use any combination of your snack and counter service credits each day. For example, during Food & Wine we've used a dozen snack credits in one day sampling our way around the world and not used any counter service credits at all.

Also you are correct that with the QSDP you will not get any table service credits.

Counter service credits can never be combined to purchase table service meals. On the QS dining plan you are not entitled to have any table service meals covered by your dining plan.
