Quick & easy cold appetizers?

A friend of mine is going away for the weekend on her boat & needs to make a cold appetizer (on the boat). She has a microwave and fridge, but no other means of cooking. Any good ideas for cold appetizers?

how about spinach dip? in a good bread bowl. :hyper:

Fruit kabobs
Cheese, keilbasa, pepperoni & crackers
Spinach dip w/bread for dipping
finger sandwiches - also can use cookie cutters to cut out bread shapes
shrimp cocktail

How is that for a start?
 
We like to take a piece of ham , cream cheese and a green onion and make ham rolls. Just spread the cream cheese on the ham and lay the green onion on top of it roll and cut into 1 in pieces. We call them " White Trash Rolls"
 

Green chile pinwheels are one of our favorite summer appetizers. Mix 1 block of cream cheese with one small can diced green chile. Spread a thin layer of cream cheese mixture on flour tortillas (all the way to the edge), roll them up, then slice them. One cream cheese will make several tortillas worth. Easy and yummy!

We call them " White Trash Rolls"

I make something similar. I flavor the cream cheese with horseradish. Spread the flavored cream cheese onto the ham and roll up. Cut into approx. 2 inch pieces. Dip each end of the roll into a little bit of mayo. Then dip into crushed salted pistaccio nuts. They are really good and a big hit with everybody.
 
How about a 7-layer Dip? (like a cross between an exploded taco w/o meat & a pizza) That's no cooking at all.

Or .....
Chex Mix
Tortilla Chips & Dip (cream cheese, sour cream & salsa)
various cheeses & crackers
crab dip
 
Ginger dip. Mix cream cheese, chopped crystalized ginger and a wee bit of lemon juice (for right texture) and put in on club crackers. A hit wherever I take it and can be made ahead of time. (It is better made ahead!)
 
Since they're going to be on a boat, here's a seafood one.

Get yourself a block of cream cheese (the regular kind, not the 1/3 fat), a heapin' helpin' of salad shrimp (the really tiny ones, steamed ahead of time), a box of Ritz crackers and some good cocktail sauce.

Ring a serving platter with the crackers, place the cream cheese in the middle of the platter and heap with the shrimp. Drizzle the cocktail sauce over the shrimp and put the rest in a dipping bowl. Viola! Cold seafood appertizer.

Of course, you'll need something cold and tasty to wash it down with.

~Apple Berry Salsa with Cinnamon Chips
~Any kind of wrap sandwich - cream cheese spread mixed with whatever (the one my kids like has dijon mustard and honey), add a lettuce leaf, deli meat, chopped bell pepper and diced tomatoes all on a tortilla. Cut into 6ths for easy appetizers.
~Caramel Apple Dessert Duo. Mix peanut butter, cream cheese and caramel sauce in one bowl. Chop a red apple and a green apple and add to another bowl. Add cinnamon and more caramel sauce. Use cinnamon chips or apple wedges as dippers and scoopers.

Place a block of cream cheese on a plate. In a bowl make some cocktail sauce and add a drained can of shrimp. Mix and make sure the shrimp is in small pieces. Pour over cream cheese and serve with crackers. It makes a really nice spread. It might sound strange but it is really yummy.
 
Fresh tomatoes cut up in a bowl with some good olive oil, nice fresh mozzarella, some chopped fresh basil, oregano, and some cubes of day old Italian or French bread:D
 
I'd go with shrimp and cocktail sauce. Everybody loves shrimpt (except me, I hate them!! :crazy2: ). Just make sure to keep them cold. I always serve them on a platter with a layer of ice.

Yum....thanks for the reminder, jx3smom! A friend of my mom's used to always have this at get-togethers and I haven't thought about it in years. I might have to stop at the store on the way home!
