Quiche, how do I make it?

There's tons of recipes online. Try Yahoo! Food, allrecipes.com, or even kraftfoods.com. Basically, there's the crust (which you can either make yourself or buy frozen at the supermarket), and the eggy part (duh :)). You can add whatever you want to the egg part: spinach, cheese, mushrooms, chopped chicken, bacon, you name it. There's always some milk and sometimes flour (to help it keep together, perhaps?). Basically, pretend like you're making an omelette (ingredient-wise), then pour on top of a crust. Usually cooked for around 45 minutes, sometimes more, sometimes less, depending on the temperature. Those are the basics anyway.

Here's one to get you started: http://food.yahoo.com/recipes/kraft/55546/spinach-quiche

I also like making frittatas, which is the same sort of thing but over potatoes (hash browns or just roasted) instead of the crust.

HTH! GL! They're yummy. :thumbsup2

My basic recipe is 1.5 cups milk + 3 eggs & salt and pepper. To that I usually add ham and cheese. Sometimes I do spinach and/or mushrooms. If you do spinach or mushrooms (which should be cooked before hand to release their liquid), I cut down on the milk. I blind bake the pie crust for about 20 minutes at 425 and then pour in the filling and cook for another 40 minutes at 375.

Here is a quick and easy traditional recipe that I make whenever I want an easy dinner:

Pre-cook the crust in the oven 15 minutes at 400 (so it won't absorb the liquid), putting weight inside to get a flat bottom. I buy ready made, but you can do homemade if you have the courage!

Take the crust out of the oven, let cool a bit. Put whatever filling you like inside: ham & cheese(gruyere), tomato & bacon (pre-dry tomatoes a few minutes in the oven to remove excess water), spinach, leek.

In a measuring cup, crack 3 eggs and add enough heavy cream to fill up to 1 1/2 cup. Mix slightly together, avoid over whipping, you don't want air bubbles in your quiche.

Put back in the oven at 350 for 30-35 minutes.

Enjoy!
