Hi. I got some springform cake pans as a freebie when I had a party. I've never used them before. Is there anything I need to know about using them or do I use them like a regular cake pan??
You use them like a regular pan, but make sure you grease them well at the joints to keep the batter from leaking. Some people make foil collars for the bottom just to be sure though I never do. Remember to run a small knife around the edge before you release the side to avoid breaking the cake.
Or you can line them with baking parchment. The main thing to remember is that if you're putting them on a high shelf make sure you can get them down easily as if you poke them down with a spatula and drop them they go kind of misshapen and don't work so well

I have a stupid question. I have seen so many yummy looking recipes for the springform pan but I don't own one. Can you substitute another kind of pan?
