questions about Remy, excursions, and more

Hello this will be our second disney cruise, but first on Fantasy. I have a few questions.

1. What are the seating times for Remy , is it difficult to get a reservation for it, and what is total price with wine pairings?
2. We want to do the push and pull dolphin excursion on Cozumel. Do these type of excursions fill up quickly? we are only cc silver so we have to wait a while to book
3. How can I find more information on cooking classes, mixology class, or beer/wine tastings on the cruise?

The reservations stagger at Remy, I believe they start at 6pm. It should not be hard to get in.
If you can try to do their dessert experience at Remy, its at 3pm on the Thursday, its great all around the desserts and the staff are wonderful.
I can't help with the excursion, never did that one, but you should be ok as far as booking, they have many departure times available.
The mixology classes can be booked when you board. Cooking classes are first come, first serve they are free.

I was able to get a Remy reservation without any cc benefits a few days after my booking window opened for a cruise this August. We had a 6:30 reservation which worked great for us because you get to see the sunset and we were done by around 9:15. Which was pushing it for my 3YO at the kids club. It was $80 plus $105 for the wine pairing.
