Questions about expiring passes?

I'm a little confused. I understand that with a 7 day ticket you are able to go to the 4 major parks for 7 separate days. If you purchase the extra waterpark and DQ feature would that mean you actually have more days if you don't also go to one of the major parks on that day. In other words,
if we went for 10 days could we do the major parks 7 days and the water parks on 3 separate days over a 10 day period?

You are correct. The water park and DQ features can be used on non-park days to add extra "days" to your stay. All features must be used within 15 days unless you buy the no expiration option.
 
Tickets without the no expire option expire 14 days after first use. The extras can be used any time before the ticket expires if you went to a theme park that day or not. So yes if you want you can do the theme parks for 7 days then visit the water parks for 3.

If you are going for 10 days though I would just purchase the 10 day ticket to start with. The price differance between the 7 and 10 day tickets is only six dollars. Many people do not want to spend all day at the water parks but spend half the day then go to one of them amusement parks for the rest of the day.
