DW and I will be in San Diego from Dec 30 - Jan 8 and wanted to spend a couple of days at DL. Can anyone give me an idea of how busy we should expect it to be or what two days would be best to visit? We've never been to DL, but were at the world in september when attendance was very low. Ride wait times were all less than an hour.

That's a tough one because it is a busier time with NYE being the busiest day of the year.
January 7th will be a lower crowd day, but a lot of rides are going down for refurb then (BTMRR being one of them). You could maybe choose that as your second day if low crowds are a priority.
They have not updated the Fantasmic show info for January yet. If you want to see that, make sure you go on a day it is showing.
If the days need to be consecutive, I may consider Jan 3 & 4. If not, I may do Jan 3/4 & 7.
We are planning a last minute trip the same time, going to the parks on 1/2-1/4. I expect it to be very busy, but I know it will be a great time for us regardless.

Don't go on NYE, but do go before 1/7 if you want to see the Christmas decorations, and have all the rides up and running. We've spent the week between Christmas and New Year's day at DL 5 times, and while it's a lot of fun, it's very crowded. This year, we will be at the parks for 5 days, starting 1/1. I know it will be less crowded than the prior week, and we'll still get to see the decorations (and it's still blockout dates for all but the deluxe and premium AP's, IIRC).

NYE through the end of the first week of january is the busiest week of the year (excluding thanksgiving weekend).
I would follow everyone else advice and SKIP NYE! NYD is going to be extremely crowded as well. you can expect that whole week waiting in 2 hour plus lines for main attractions. Utilize FP wisely! You will still have fun just prepare yourself! And hopefully the weather will be nice as it usually is.
