Questions about CRT breakfast?

In reading the allears menu I am confused about the breakfast. It says it is all you can eat and list a bunch of items you can get. I thought in reading trip reports that there were specific plates you could get that only included certain choices. But the menu makes it sound like you can have any of those items. I was hesitant because I thought it was a limited menu but if you can basically have any combination you like then that should please the family. So how does the menu actually work for breakfast? Thanks
 
Also, I have read about an omelette but it is not on the allears menu?
 
When we went last year it wasn't family style (which is when they bring large platters/bowls of food for everybody to share). We were each brought a pre-plated breakfast (which I believe was refillable). There were at least two options, perhaps more. For example, my mother ordered the "low fat breakfast" and the contents of her plate were completely different than the standard breakfast I ordered.
 
There is also some talk that things will be changing with CRT in February 2010. Not sure if it is menu changes, character changes, etc. I wrote a letter to Disney asking for confirmation a couple of weeks ago and I started a thread about it that I will update on as soon as I get more information.

We had breakfast there in November and they were pretty flexible and accomodating. My husband wanted the French Toast meal but requested the french toast stix, extra potatoes, and extra bacon instead of sausage. He got exactly what he wanted and refills on anything he wanted.
 
Thanks for the info. So they are pretty good about substituting certain things? Has anyone seen or tried their omelette?
 
Also thanks for the link to the update thread. If there are any changes it will definitely affect us since we are not going til the summer...
 
CRT will in fact change 2/27/10 to Fantasy Dining. While there has not been any discussion of a menu change, the big difference is that the princesses will be available for dinner as well as breakfast and lunch. Cinderella will only appear for the photo prior to your meal.
 
My last visit to CRT was a couple years back, but I've eaten there a lot, and the way it has always worked is that each diner would choose one of the pre-plated options, and then everyone could "mix and match" for seconds.

For example, I would always get the "regular" breakfast, and then get the yogurt-and-granola bowl from the "healthy" breakfast for seconds, along with some extra bacon and French toast.

(Yes, it's a big breakfast, but I'm one of those rare people who eats at CRT because I like the food. Going again next month, and I hope things haven't gone down hill too badly.)

I see no reason why you couldn't ask for some changes with your *first* plate if you know what you want - after all, it's *your* breakfast, and you've certainly paid enough for the privilege of being there.
