Hopefully I explain this right:

Let's say I wanted to book HS multi-passes for evening hours (which I 'assume' the system would need to recognize a park reservation for???)--but we wake up and want to do a 'different' park that morning, is the system going to allow that??? I THINK once you book evening LLMP's the system recognizes you will park hop--therefore not needing the park reservation--but I want to make sure.

First are you sure that you need a park reservation? The newer dated tickets don't require park reservations, like those that are part of a package. For an AP or other ticket types you will need a park reservation for the First park you enter on a day.

So if your plans change in a morning then you just need to change your park reservation to the first park you want to enter. Making this change will not impact your LLMP selections other than you you can't start using them in the first park. And yes if you want to change your LLMP selections to your other (First) park you are able to do that but the availability will be more limited.

Does this make sense?

Yep, we are AP's (even though we are resort guests too), so we need a Park Reservation. So, essentially I'd keep my current DS Park Reservation--make the LLMP--then switch the day-of (morning) to the park of our choice--correct? I kinda figured that would work, just wanted to make sure.......

Technically you are able to change your park reservation any time after you have completed your initial LLMP purchases. You don't have to wait to the day of your visit.
