Question on crowds

easyWDW's crowd calendar shows 7's and 8's for the week of thanksgiving, so if that's correct, it would be the least crowded of your three options.

All the Christmas decorations will be up by then (except for the MK tree), plus the Osbourne Lights, and you'd have the option of going to MVMCP on the 19th or 20th. As PP noted, the Holiday storytellers at Epcot won't start until the day after Thanksgiving, along with the Candlelight Processional.
 
It is busy, but so magical at Christmas.
I vote for the December dates. Hit the MK first thing though and don't wait until the 23rd. :)

I just checked my crowd tracker anI agree with you. The OP week in December looks like it will be very busy. All of her choices will be, I think, so I would just choose the one that works best for my family and plan well.
