Question for recent cruisers about excursions

Do excursions sell out before you board, now that they are taking reservations 60 days in advance? How risky would it be to wait and decide upon boarding??? Getting our large group to decide all of this before we sail in June will be a challenge. (We're on the Eastern 7 day cruise)

P.S. We are especially wondering if the Golden Eagle Catamaaran at ST Maarten and the Trunk Bay snorkeling book up before boarding.

I waited until the last possible day to pre-book, which is 3 days before your cruise. I booked the am GEC no problem. I don't know about the pm, it looked pretty packed when we saw them leaving. Don't worry!
