Question about SDMT on May 2

First trip ever to WDW, yay!!
Just me & my husband, no kids.
Quick dine plan, so no ADRs necessary.
Five days in the parks, NOT park hoppers.
We fully intend on hitting every day hard, I'm talking rope-drop-to-park-close!

Here's what I'm thinking so far:

Thursday, May 1: flight to Orlando lands around 1pm, take ME to POR to check in. Then the night is open. Maybe a boat ride to DTD?
Friday, May 2: MK (hoping to make BoG for lunch)
Saturday, May 3: AK
Sunday, May 4: HS
Monday, May 5: EP
Tuesday, May 6: Whichever park we want to repeat! (I'm thinking most likely MK)
Wednesday, May 7: Wake up early, ME back to airport at 7am to catch flight home!

Here's my biggest concern right now: I've been reading about how Friday, May 2 at 10:15am is the dedication ceremony for Seven Dwarfs Mine Train, the new ride in Fantasyland. On one hand, I think it would be really cool to be there for it! To be one of the first to ride it! On the other hand, I keep wondering how it will affect the park all day. Will it be so much more crowded that the wait times for everything will be ridiculous??
Thoughts? Advice? THANKS!!
 
The May 2 date is still conjecture, albeit a pretty solid bet at this point. Assuming its true, I think crowds will be abnormally high for what is usually a quiet time of year.

Do you think it would be beneficial to switch our park days around? Our main goal being to hit the parks on days when they are the least crowded with shortest possible wait times. And if so, any ideas on which days to switch?

Maybe swap your plans for Friday and Monday? I dunno, it's not an exact science. ;)
 

If it was me I would swap your MK and your Epcot days and then use day 6 to repeat Epcot. On a trip with no kids I would want to do Epcot twice, not MK. Just a thought.
 
I would add another day to your tickets and go to Epcot on you arrival day.

I would just keep everything else the same and plan on going back to MK on the 6th.
