Question about priority seating

:wave: Hi! My hubby-to-be and I are planning a disney honeymoon in August (8/15-8/19). We will be at the park for four days and then we're going on the cruise for three. While at the park we'd like to make the most of the time we have and plan for a special dinner each night. We're staying at the POLY resort so I definately want to go to the the Luau. We's also like to do the Fantasmic Dinner Package at the Brown Derby and we'd like to eat dinner one night at Cinderella's castle. I know for all of these you need to have priority seating... When should I call? I'd like to only have to make one phone call since it's a long distance number.
Also how does it work... do you talk to an actual person or is it a recording?

Oh and one more thing! For the Luau, which is the best time to go... the one at 5:15 or the one at 8... I'm thinking maybe the one at 8, because we'd like to maybe go out onto the beach right after and watch the fireworks... but I'm not sure.
 
I would probably call as soon as you have your schedule worked out. I've found that the closer it gets to the departure date, the less of a chance you have at getting the exact time that you want. Although, I was able to change a PS today with no problem. You do actually get to talk to a person and they have always been extremely helpful.
