We have a March UY. I am considering booking a 4 night trip for February 2022, using 2021 points. What happens to those points if we have to cancel?

If you cancel before your banking deadline (Oct. 31. 2021) then you can bank the points into your March 2022 UY. If you cancel after 10/31/2021, you will need to use those points before Feb. 28, 2022.
 
Would it work any differently if banked the 2021 points in to 2022 first, then made the February reservation? What would happen to the points if they were already banked and then we had to cancel?

If you cancel 30 days or less prior to the check in date, the points go into holding. It won't matter whether they're banked, borrowed or current UY points. All points from that reservation go into holding and expire at the end of your UY.
 
But, if we cancelled more than 30 days out, the points would go back in to the 2022 UY. Correct? And then would still be able to be used through February 2023?

No. Borrowed points are no longer being returned to their original UY. If they were banked in, they would be usable until the end of your UY. If they are current March 2021 points, you would need to cancel by October 31 in order to bank them into 2022. Otherwise they expire 02/27/2021.

Banking and borrowing are final transactions, if you bank 2021 points into 2022 they stay there & must be used for travel in your 2022 use year - so for you for trips between 3/1/22 - 2/28/23. Those points can’t be unbanked & returned to your 2021 use year & they can’t be banked any further, if not used by the end of the use year they are banked into they expire.
Likewise if you borrow 2022 points into 2021 they are stuck in your 2021 use year & must be used by the end of that use year or they’ll expire, they cannot be unborrowed & returned to their original 2022 use year & they cannot be banked into their original use year either.
Note some of this was relaxed over a year ago due to the pandemic, but that ended & the original rules are back in place (international owners have some special rules at the moment since they still can’t come to the US.)

Since your trip is in your 2021 UY, if you bank 2021 points they can no longer be used for a Fev trip.

You would then only be able to borrow 50% from 2022 to book it.

Traveling in the last month of your UY is very risky if something happens and you have to cancel your trip after the banking deadline.

So, anything that happens after October 31st and you cancel, even at least 31 days out to avoid holding status, those points are expiring Feb 28th, 2022

I might consider getting the travel insurance DVC offers just in case. You at least get the cost of MFs back if something happens.
