eggbeaters are egg substitute...they are made from egg whites, but they are pasteurized and contain no cholesterol. DH has high cholesterol so shouldn't eat many eggs, but I started using them before that, as my kids like to "lick the beaters" wen I bake, meaning to eat some dough raw, which isn't safe if you use real eggs. It's safe to eat eggbeaters raw, which is why I bake with it

My kids can eat all the brownie, cookie, or cake dough they want (and I get cute messy face pics for the scrapbook

"Eggbeaters" is a brand name. There are others, like Better'n Eggs, that are the same thing.
Oh, they are also convenient when halfing a recipe that calls for 1 egg, as you can measure out however much you need. My pancake recipe makes 14, but my dd's each usually eat only 1 or 2. So I 1/4 the recipe!
