Question about booking ADRs

I am a little confused here... I have been reading that people are (once again) holding multiple ADRs for meals and then canceling as their plans firm up. It seems they are holding multiple reservations for the same meal period. The last time I booked ADRs at Disney, the booking system prevented you from booking more than one meal within a 2 hour (?) time period, so if you had an ADR for 6pm, you couldn't book another from 4-6pm or 6-8pm. Is this still true? Will Disney block you out, or can you hold multiple ADRs now?

Each adult in a party can book a different ADR. Assume a family of 4 (2 adults, 2 kids). One adult can have a 10:30 Crystal Palace, and the other can have an 11:00. As long as they haven't listed one another on the reservation (the only restaurant I have seen that requires this is CRT, but there might be others), they can have both and cancel the one they aren't using the day prior.

Another scenario: I frequently book two ADRs at BOG a few hours apart (same meal) when I am unsure of park opening hours. I'll book an 8:00 and a 10:15. If the park opens at 8:00, I'll cancel that one. If the park opens at 9:00, I'll keep the 8:00 and cancel the other.

I see now you are actually asking about the same adult holding as 10:30 AND an 11:00 ADR. If that's possible, I haven't been able to do it! I tried to book a 7:00 and an 8:30 during our Thanksgiving trip, thinking I would cancel one as soon as I knew for sure which flight we would be arriving on, but it wouldn't let me have both. I ended up taking the later one. It's late for a dinner for us if we're on the earlier flight, but at least we'll have something if we end up on the later flight.
