This is incredibly high in calories and not especially good for you, but I only make it on special occasions. It's my kids' favorite, from a local restaurant:
Theresa's Sweet Chili Linguine
1 pound pasta (even though the recipe has linguine in the title, I think fettucine works best)
1 pint heavy cream
5 oz sweet chili sauce
3/4 cup grated parmesan cheese
12 oz. boneless skinless chicken breast
Olive oil
Spice mix (I prefer a cajun mix like Tony Chachere's)
Parsley
Cook the pasta according to package directions.
Warm the cream in a saucepan, then add the chili sauce.
Gradually add the parmesan cheese a little at a time, stirring to ensure it melts into the sauce. Keep warm.
While the pasta is cooking, dry the chicken breast and sprinkle both sides liberally with the spice mix.
Drizzle some olive oil in a skillet heated to medium hot and cook the chicken breast approximately 5 minutes/side.
Let the chicken breast rest for a couple of minutes before slicing in 1/2 inch thick pieces against the grain.
Plate the meal by making a bed of pasta , placing the chicken on it, ladeling the sauce over all and garnishing with a little extra parmesan cheese and some chopped parsley.
Serves 4.
