1. We LOVE them.

2. Keep the pumpkin goop on the seeds, as much as possible. Toss with some oil and salt, bake. Watch the heck out of them! I burn them like every other time. I wonder if I'm doing something wrong or if I'm just a scatterbrained idiot (likely).

3. We go through A LOT of pumpkins this time of year, just for the seeds. Carve up a jack-o-lantern each time, but it's getting old. I suppose I could just throw them out, but I have this thing about being wasteful. How hard is it to make pumpkin pie out of an actual pumkin?

I heard that too, but I'm afraid it would take away some of the pumkin flavor. I wonder.......
 
I just buy them from Austin Nut Co. at the local store. Very yummy.

I've made my own from scratch, but I don't like to waste the whole pumpkin either.
 

Love pumpkin seeds. I usually clean the goop off of them, spray them with PAM or coat in a little bit of olive oil, and sprinkle them with salt, pepper and Emeril's original seasoning.

Yum! Makes me want to carve our pumpkins tonight!

I coat a cookie sheet with oil. Wash most of the pumpkin guts off. Put them in a zip lock bag that has equal parts of salt, garlic and onion powder and cayenne pepper powder in it. Shake until well coated and then bake until they pop. They're good with just salt and garlic on them too!!

Edited to add - we use the pumpkins to bake stew in.
 
I love pumpkin seeds! I rinse them off in a colander, then spread them out on a cookie sheet. I sprinkle on salt and bake them in the oven. It's hard not to burn them, though. I think I'll try some of the methods suggested here. :)
 
I love pumpkin seeds.

I save all the stringy guts to cover the seeds, lightly salt then roast them in the oven, on a lightly spritzed with cooking spray, cookie sheet, turning them over once I start to smell them.

Usually I just tossed the flesh pf the pumpkin, but last year I had a smallish one. I made creamy pumpkin soup out of it that was very good. My ds12 is already looking forward to me making another batch of it this Halloween. I have heard that the smaller pumpkins are sweeter and therefore more suited for cooking/baking.
