Pumpkin Seed Recipe Needed

Hi Friends-
Does anyone have a GREAT pumpkin seed recipe? My daughters would like to carve their pumpkins tomorrow, and then turn the seeds into something delicious. I found a few recipes online, but I want your opinions please!
 
cleaned, baked on low with butter and salt until light brown. If I could buy a high volume seed pumpkin, I would get it just for the seeds.
 
I roast them in a 375-400 degree oven with olive oil, greek seasoning, kosher salt and some seasoned salt. Bake until browned maybe 20-30 minutes. Stir them up once in a while and drain on paper towels.
 

I made these yesterday and they were sooo good, a bit more work than the usual, but then again, they taste much better than the usual.

Caramelized Spicy Pumpkin Seeds


Ready In: 35 Minutes
Servings: 8
"Pumpkin seeds from your Halloween pumpkin make a crunchy, sweet and spicy snack when roasted and coated with sugar, cinnamon, ginger, cumin, and a pinch of cayenne pepper."
Ingredients:
3 tablespoons white sugar
1/4 teaspoon cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 pinch cayenne pepper
2 cups raw whole pumpkin seeds, washed

and dried
cooking spray
2 teaspoons salt, or to taste
1 tablespoon olive oil
2 tablespoons white sugar
Directions:
1. Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
2. In a large bowl, stir together 3 tablespoons of sugar, the cumin, cinnamon, ginger, and cayenne pepper, and set aside.
3. Place the pumpkin seeds on the prepared baking sheet, spray them with cooking spray, and sprinkle with salt to taste. Bake the seeds in the preheated oven until lightly golden, 20 to 25 minutes.
4. Heat the oil in a large nonstick skillet over medium heat, and stir in the toasted pumpkin seeds along with 2 tablespoons of sugar. Cook and stir the seeds until the sugar forms a coating on the seeds, 2 to 3 minutes. Stir the caramelized seeds into the bowl of sugar-spice mixture, toss to coat, and let cool.
 
I usually don't clean mine very well, mix with some sea salt and bake. I like the baked pumpkin along with the seeds!!
