Princess Plan & Concierge ?

Since we are doing the Princess plan, we get a breakfast voucher. Should we wait until we hear from the Concierge and let them book it or do it ourselves.
Also, how exactly do you book the special seatings at the shows?

What is the Princess Plan? I've been reading about it, but haven't gotten the full details. Is it a special package??? THANKS
