Will I be able to remove charging to our room capabilities for two of the four adults in our cabin on the Wish? Also, where on the ship and CC could someone pay with a gift card, if there are any?

Yes, you can remove charging privileges by going to Guest Services on-board. You can also set up individual payment methods for each adult.
I know you can use gift cards in all the shops onboard, never tried at bars or specialty dining. You cannot use gift cards on CC or LC, or at least couldn't last time I was there.

Ok, so the island, its only charging to the room. Maybe I cound reinstate such privileges on the CC day only?

I think only the gift shop onboard accepts gift cards, everything else is charged to the stateroom. Each adult can set-up their own charging -- so my recommendation is to set that your credit card covers yourself and spouse and allow the other 2 to do their own "cash" accounts. They can use the gift cards towards their own balance. If you wanted to cover something for them (a spa treatment, souvenir, etc.) you can also stop at Guest Services to pay something down, or just give a gift card ahead of time.

Keep in mind that gratuities and excursions will all be charged to the onboard account as well, even if you shut it down for other charging.

Only the shops on the ship can charge a gift card directly, but you are allowed to bring a gift card to guest services and can have guest services put up the entire gift card's amount on your tab before you actually make any on-ship purchases. That is what I typically do. On day one I'll toss enough gift cards on the room to pay for tips and port adventures plus about $500 for spending onboard.
