Pre-holiday pantry challenge

Tonight was easy, grilled ham and cheese because we were running late. Also had apple slices and grapes. I am going to make taco meat here in a minute for tomorrow to use up that ground beef.
 
My oldest DD and I are still sick and my DH is at the emergency room. So tonight so far I ate a can of soup and oldest DD ate a hot pocket. Still have to feed youngest DD, probably chef boyardee and DH, probably soup when he gets home.
 
goodness, momx2...i hope y'all get better QUICK.

we are having italian pot roast with some linguini and sauteed zucchini/summer squash. dessert will be a scoop of pumpkin ice cream shared with DH.
 

Tonight was Tyson chicken patties and cascadia farm shoe string fries. I'm sick and didn't feel like cooking.

Oh yeah! I'm sick too. Dinner was canned soup (you choose, you nuke) and raspberry muffins from a boxed mix.

Yesterday was a blur. I think most of my family had chili. Sunday was chili - and that was very good on using up pantry staples.

I'll need milk again tomorrow.

Dinner is sliced roasted potatoes with sour cream and lumpfish roe, and broccoli cheddar soup.

Used up the broccoli (well, the fresh stuff - still have some frozen), and have 3 lunches to boot. :thumbsup2
 
Hey guys!

Today I took a break.....tired of cooking and had a PTA meeting to run to. Dinner was hot dogs (freezer) hot dog buns leftover from Halloween party (freezer). 1/2 bag of frozen french fries and 1/2 bag frozen onion rings. Home frozen garden corn. Grapes from the fridge.

In a couple of weeks my dinners are going to get very strange......:lmao:

For lunch I've been eating all the little bits of dinner leftovers.

This thread sounds like fun! I'm moving in two weeks so this is perfect! I REALLY need to get using up a lot of my pantry/freezer items. The less I need to move, the better!!

My question is this.... I have a LOT of meat I've stockpiled in my deep freezer in the basement. In fact, I think I might have a turkey buried in there that I bought on sale LAST Thanksgiving, LOL! How long do you all keep meat frozen before it needs to get thrown out? Could I safely cook it this year for Thanksgiving or does meat go bad after a few months?

I've had beef in the freezer for around a year that was still good - I'm not sure about the turkey. Good luck moving - makes me tired just thinking about it!:)

Same dinner at my house tonight as I'm still sick. We also need milk tomorrow and a few fresh veggies and fruits. My pantry and freezer is stocked, but my fridge looks pitiful!

For lack of a better description, lumpfish roe is cheap Swedish caviar. I buy it at the food market at IKEA. It's salty and slightly fishy and comes in black or orange - makes a nice topper for potatoes & sour cream or hard-boiled eggs and sour cream.

I picked up some a couple weeks ago to make appetizers, and since I'm trying to eat up everything in the house, I made some appetizers for my dinner tonight! :goodvibes
 
I'm going to have to go to the store in the next couple of days because I'm actually running out of stuff! And....a lot of what I need is on sale this week! :woohoo: That never happens.

the "use up everything" beef stew was great tonight! For tomorrow...manwiches from the freezer.
 
Did great last night! Had chili nachos and used up all of the leftover chili that was in the freezer. Also used some of the lettuce and tomato we had. After using up the chili, I discovered some red sauce I made a while ago in the very back of my freezer....therefore we are having spaghetti tonight :rotfl2:

I have only gotten fresh fruit, produce, and dairy so far. We are eating up the meat in the freezer, eating up the cans of tuna and chicken, finishing up the cereal and boxes of pre-made stuff.

And after this we are going completely fresh! No more canned stuff!

We are easing into it slowly so this pantry challenge is good.

Yesterday I made fresh chicken/rice/vegetable soup in a HUGE pot. I also made bread in the breadmaker for fresh 100% whole wheat bread. I have tons of wheat I need to grind and use so this is great!

Don't want to get off topic but just a quick aside: Where do you get your wheat from? Do you grind it fresh for each loaf? This is something I am really interested in and couldn't find anyone who did it.....most people I know think I'm crazy just for making all our bread myself. Thanks
 
Had to stop for some fruits, veg's and milk today - took dd3 and her same-aged friend - oy - that is a budget helper as I was desperate to get out of there asap!;) Tonight is turkey tettrazini and salad or green beans.
 
So today I spent $54 and change, but while my freezer and pantry are stocked, my fridge was empty. So I bought:

2 lbs organic red grapes,
1 fresh pineapple,
green onions,
2 lemons,
lime juice,
ranch dressing,
1 box of egg rolls,
12+ bags of 12 oz. frozen veggies on sale for .88 cents
hotdog buns,
bag of 12 mini corn on the cobs, frozen
2 gallons milk,
1/2 gallon silk vanilla soy milk
1 bag of shredded 2% cheddar cheese,
1 lb. of ham,
1 lb of bologna (DD loves it :confused3)
1 dozen organic eggs
1 can 98% fat free cream of mushroom
2 boxes shells and cheese
shaving cream for DH,
1 box of dryer sheets

I think that's it. I didn't mean to spend so much, but really wanted the frozen veggies because they were on sale for .88 cents per bag, plus I had a $3 off $15 frozen food purchase. I know next week I will need milk, bread, fresh fruit and deli meat again, but hopefully that will be it.

Tonight we are eating boneless porkloin chops with dressing covered in cream of celery mixture and probably fresh frozen corn....yum!
