A Garfield's Restaurant and Pub recently opened in my area. I love the loaded potato soup. Anyone know where I can find a recipe for this or a potato soup that is similar? Thanks
 
I don't usually use a recipe for potato soup, but have found that ost places I've had it they taste pretty much the same...depending on what you put into it. Here's the recipe from WDW:

LOADED POTATO SOUP
from Olivia's, Old Key West Resort

1½ lb potatoes, baked, coarsely diced
3 oz broccoli, diced
3 oz onion, diced
¼ tsp white pepper
4½ oz sour cream
1 1/3 qt chicken broth
3¾ oz roux*
GARNISH
cheddar cheese, shredded
bacon bits

Bring chicken broth to boil. Add onions, broccoli and pepper. Boil 10-15 minutes or until broccoli is tender. Add potatoes. Bring to boil. Add roux, stirring constantly. Reduce to simmer 10-15 minutes. Fold in sour cream. Simmer 5-10 minutes. Garnish with shredded cheese, top with bacon. Serves 10.


*Roux

1 2/3 lb butter
1¾ lb all-purpose flour

In saucepot, melt butter. Slowly add flour, stirring constantly to avoid lumps. Cook 10-20 minutes (med low heat). Roux should be smooth with almond aroma. Quickly remove from heat.
 
not an actual recipe...we call them "mother make ups" but lots of people like this. it makes a giant batch for dinner and we eat it for lunches the next day or 2

about 2 1/2-3 lbs of potatoes..any kind are OK, peeled and cut in pieces like you would for mashed potatoes
cover with water,
add a tablespoon of chicken soup base( kind of like bouillon but not nearly as salty, my store carries it in a tub by the bouillon)
add 1 bay leaf and some parsley( like a teaspoon dried) and black pepper( the soup base usually is salty enough for me

cook till potatoes are tender( 20+ mins,like you are making mashed potatoes)
drain potatoes but save the liquid
remove bay leaf from broth

add potatoes, about 2 cups at a time to a blender with a small amount of the broth( just so they will blend) and puree
do that with about 2/3 of the potatoes. return to pot, mash lightly the rest of the potatoes with a potato masher just to break them up a little so they are bite sized and add to pot.
to pot of pureed and mashed potatoes add about 8 oz of sour cream( usually i use light or fat free), about 2 cups shredded cheddar( light is OK here to) a dash of hot sauce, and about 4 or 5 chopped green onions. heat on med low stirring often till cheese melts, adding some more broth if need be till the soup is the consistency you like it. if it's still to thick add a little milk

fry some bacon till crisp and crumble it. put a little bacon, a few green onion slices and a little cheese on top of each serving. this probably makes 10 or so bowls

an alternative if i make a ham and have a ham bone is cover the bone with water and simmer about an hr, remove the bone and use that water to cook the potatoes in instead of adding the soup base. then i cube some left over ham and add it instead of the bacon to the soup before i reheat it, maybe 2 cups for the pot

this is very hearty so all we have is a salad with it.

3 pounds red potatoes -- washed
1/4 cup margarine -- melted
1/4 cup flour
8 cups half and half
16 ounces Velveeta cheese
White pepper to taste
Garlic powder to taste (about 1/2 tsp)
1 teaspoon Tabasco sauce
1/2 pound bacon -- fried crisp
1 cup Cheddar cheese -- shredded
1/2 cup fresh chives -- chopped
sour cream (? my suggestion) -- for garnish

Dice unpeeled red potatoes into 1/2" cubes. Place in large Dutch oven, cover with water and bring to a boil. Let boil for 10 minutes or until 3/4 cooked.

In separate large Dutch oven, combine melted margarine and flour, mixing until smooth. Place over low heat and gradually add half and half, stirring constantly. Continue to stir until smooth and liquid begins to thicken.

Add cut-up Velveeta. Stir until melted. Drain potatoes and add to cream ixture. Stir in pepper, garlic powder and hot pepper sauce.

Cover and cook over low heat 30 minutes, stirring occasionally.

Ladel soup into bowls and top with shredded cheese, (sour cream), crumbled bacon, and chives.

Makes 8 servings.
 
Tony Roma's make an awesome potatoe soup, anyone have a recipe similar to this.

2 medium potatoes (about 2 cups chopped)
3 tablespoons butter
1 cup diced white onion
2 tablespoons flour
4 cups chicken stock
2 cups water
1/4 cup cornstarch
1 1/2 cups instant mashed potatoes
1 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon basil
1/8 teaspoon thyme
1 cup half and half

Garnish
1/2 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon
2 green onions, chopped (green part only)

Preheat oven to 400 degrees and bake the potatoes or 1 hour or until done. When potatoes have cooked remove them from the oven to cool. As potatoes cool prepare soup by melting butter in a large saucepan, and sauté onion until light brown. Add the flour to the onions and stir to make a roux. Add stock, water, cornstarch, mashed potato flakes, and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes. Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Chop baked potato with a large knife to make chunks that are about 1/2-inch in size. Add chopped baked potato and half-and-half to the saucepan, bring soup back to a boil, then reduce heat and simmer the soup for another 15 minutes or until it is thick. Spoon about 1 1/2 cups of soup into a bowl and top with about a tablespoon of shredded cheddar cheese, a half tablespoon of crumbled bacon and a teaspoon or so of chopped green onion. Repeat for remaining servings. Serves 6 to 8.
