Potato skins

Any one besides me like to eat the skins of a white (baked) or sweet potato?

Mmmm...I like the skins as well as the potato inside. :D
 
YUMMY!!!!!!!!!!!!!! I coat baked 'taters with just a touch of olive oil, and rub on some kosher salt, so they are nice and crispy and seasoned. MMMMMMMMM
 
Nope. I gut out the white potatoes, discard the peeling. I don't eat sweet potatoes.
 
Mmm. Take the skins, put butter, sour cream, chives from the garden and eat them up.

Maybe that's why I don't like them.;) My SIL tells me that every time she seems me with a baked potato. You'd think after 13 years of knowing me she'd know she can't force me to eat the skins.:teeth: I understand why y'all would eat them, but the skins have a bitter taste to me, but then again, that might be my brain talking and not the potatoes.:crazy:

I think I like the peel as much or more than the potatoe. Love sweet potatoes too :)

I want to try that it sounds sooo good! Do you put the oil and salt on after or before baking?
 
I would rather have the skins (with a little bit of potato) than the inside of the potato. Growing up I used to scoop out the inside of a baked potato and give it to my dad and then he would give me his skin.....top it with ketchup and sour cream and OH BOY!! :)

Before baking. Poke a couple holes in the potato to let the steam out (skins stay crispy). I usually put the oil on a paper towel and then rub it on, but if you were doing lots of them, you could pour the oil in a bowl, and toss them. Then just sprinkle the salt. Bake them like you ususally would, and YUMMY.

I like potato skins that they serve at resteraunts with some of the potato still attatched to the skin. Melt some cheese, add some bacon and chives...mmm YUM!
