This is my favourite corned beef recipe but you must plan ahead a bit. In total it takes 6 hours or so with the soaking included.

Saint Patrick’s Roasted Corned Beef


Ingredients
For Corned Beef
3 to 4 pound Corned Beef
Bake Pan

½ cup granulated sugar

Method
Take corned beef out of package and soak in water for at least 2 hours(to remove some of the saltiness). Take out of water and place on a broiler pan or elevated oven rack. Roast Corned Beef in a preheated 275 oven for 3.5-4 hours. Sprinkle sugar over corned beef and cook an additional 30 minutes. Take out of oven and slice. Dig in!

Irresistible Irish Soda Bread

PREP TIME 15 Min COOK TIME 1 Hr 10 Min READY IN 1 Hr 25 Min Original recipe yield 1 - 9x5 inch loaf







INGREDIENTS (Nutrition)

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/3 cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 egg, lightly beaten
  • 2 cups buttermilk
  • 1/4 cup butter, melted

DIRECTIONS





  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan.
  2. Combine flour, baking powder, sugar, salt and baking soda. Blend egg and buttermilk together, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour into prepared pan.
  3. Bake for 65 to 70 minutes, or until a toothpick inserted in the bread comes out clean. Cool on a wire rack. Wrap in foil for several hours, or overnight, for best flavor.
 
I'm going to a get together tonight where everyone brings an Irish dish....this is what I'm bringing:

Killarney Potato Balls
Boil 6 medium peeled boiling potatoes. Drain; mash until smooth.
Beat in 2 tablespoons butter or margarine, one quarter cup of sour cream, one half teaspoon salt and 1/8 teaspoon pepper, 1 egg, 1 tablespoon minced green onion and 1 tablespoon minced fresh parsley. Shape into 12 (2-inch) balls
Complete now or make ahead.
To complete now: Refrigerate at least 2 hours. Preheat oven to 375F. Place potato balls in an ungreased 13-inch x 9-inch baking pan. Brush with melted butter or margarine; sprinkle with one-quarter cup of Parmesan cheese and bake for 15 to 20 minutes or until lightly browned. Spoon potato balls into a serving bowl and garnish with parsley sprigs.
To make ahead: Refrigerate up to 24 hours. Bake and serve as directed above.
