I haven’t been to DL since before the pandemic. Can I still go on rides with just a park ticket and standby? Or do I have to buy LL or Genie +?

Yes you can totally do standby for most if not all the rides. It just depends on what you want to ride. If you're looking to do guardians, you may need LL or Genie+ but for most everything else standby is fine.

Absolutely you can. There is no requirement to purchase Genie+ or Individual Lightening Lanes, though be prepared to wait in queues that can be quite long as the day progresses.

Rope dropping the parks will likely be your best bet to minimize long waits for the most popular attractions (assuming you want to ride them).

So just checking that all rides will have a standby line? We are two adults going alone and have lots of stamina and are going for five days. My thought is if we don’t get on our what we want by rope drop we will get genie plus and LL on the last day.

Yes, all rides currently have a standby line. The only time they don't is usually when a ride first opens (i.e. MMRR only had VQ/ILL/DAS availability the first month it was open, but it now has a standby line.)
