If all goes as it did for us...
Key West....Starboard faces the dock, town; Port Side faces ocean.
Grand Cayman....She is anchored in bow facing the land, so you can see the island from either side, the view will change as the ship moves in the water.
Cozumel....Port side faced the land/other ship, we could look right onto a Celebrity ship which was kind of neat. Starboard had the view to Playa Del Carmen/ocean.
CC...This switches depending on the weather. They try to take her in aft first, in which case the starboard has the view of the family beach and the port has the view of the uninhabited side of island. On rough and/or windy days they take her in bow first and the views are reversed.
There is much to see off both sides, and it can vary, so I wouldn't plan my cruise around it too much.
