Pommes Frites Recipe?

Hi everyone--I have looked online for a recipe similar to the pommes frites served at Cafe Orleans and haven't found one. Does anyone have a recipe?
 
I don't have a recipe but I thought I remembered hearing about some sort of store bought fries that were similar? I wish I could remember what it was I heard. I remember telling my sister about it but that's all I remember!:rotfl: I'm thinking maybe it was some sort of garlic fries that they have at Trader Joe's? If that's not it then I have no idea what it was i heard before. :rotfl2: Don't know if that was helpful or not.

LOL--it was helpful but I REALLY want the recipe. Might have to check at city Hall next time I'm there--don't they have a book of recipes? I just can't believe someone on the Dis doesn't have it.

Yep, it's Trader Joe's Garlic Fries (from the frozen food section) that are pretty much *exactly* the same as CO's pommes frites. I improvised a sauce for them, which was basically 1 part Crystal brand hot sauce to 1 part mayo; not *exactly* the same as the sauce at CO, but close enough :thumbsup2
 
My mom started making home-made pommes frites right when we got back home from DLR. It's our favorite food in DLR, after the monte cristo, of course :lovestruc We are both garlic lovers so we couldn't wait to get home and make our own. She cuts the potatoes into fast-food-style fries. Then she minces the garlic and adds some parsley to it, parmesan cheese, and some salt. She fries the fries (:rotfl:), and right after she takes them out she throws the garlic-parsley mix on them and mixes them all around so they're coated. We haven't concocted any sauce but I think next time I visit home we'll think of something.

Thanks. I just had this vague memory so I was hoping that I wasn't just making something up. :rotfl: Maybe you were the one who mentioned the Trader Joe's fries before?
 
I found it for you online in a post on another forum (yes...there are other Disney forums :eek:). I'm not sure I can name where, but the name of the poster there was 10-8atDisneyland to give them credit.

Info from posting follows:

Here is the recipe straight from the Cafe Orleans Kitchen.....

1 portion fried potatoes
1/2 oz Grana Padano
1 tsp chopped garlic
1/2 oz chopped parsley
.001 oz Cajun spices

The Cajun spices consist of: cayenne, paprika, salt, white pepper, onion powder, garlic powder, black pepper, whole oregano, sugar, thyme, and rice flour. (unfortunately I was unable to get the exact proportions of the spices for the mix)

The above information comes from the actual recipe card that is in the kitchen at Cafe Orleans. There is probably a recipe card for the spice mix as well but that is probably made up in the N.O. main kitchen and I did not get a chance to look for it. The list of ingredients for the spice mix came from an ingredient card which listed ingredients for various sauces, marinades and assorted other mixes.

BTW. Grana Padano (if you didn't know, like me; I googled it) is a cheese. closest common
equivalent is Parmesan (at least according to Wikipedia).

I remember this discussion from before. That same recipe might even have been posted or I found it but I don't seem to have it anymore so I'm glad it is here again. I would love to how they made the sauce. I only had it once and I can't remember how it was except I loved it.

I will have to try this with my oven baked fries.

The post I found didn't have a recipe for the sauce but the same person that posted the recipe for the fries listed the sauce ingredients.

ALSO......the dipping sauce (Cajun Remoulade)

The ingredients are: citrus aioli, Cajun spices, 1000 island, lemn juice, salt, and pepper.

Again, the ingredients are from the same ingredient card as the Cajun spice mix. This card is used to help if a guest has any particular food allergy. The server can easily look and see if a particular dish has the ingredient the guest is allergic to. This sauce is also probably made in the N.O. main kitchen in large quantities and the actual recipe card is probably there.

Ahh, that's what I wanted to know. :thumbsup2 It has a 1000 Island base. I can start with that. I now use the spicey sauce from Bengal BBQ on a regular basis when I make chinese noodles so it will be nice to try another DL flavor. :)
 
Yes, it is the name (French) of the garlic fries at Cafe Orleans

In Europe (at least, in France and Germany) pommes frites is just what Americans call french fries, and what the English call chips.

Literally translated, it just means fried potatoes.

Of course, the Belgians claim that they invented them. True, as far as I know. So we Americans should probably call them Belgian Fries.

All of this talk of how good these fries are inspired us to go by Trader Joe's and pick up a package. YUCK!!! Only buy these if you want to ward off vampires and all other living and undead creatures. :scared1: We couldn't eat more than a few and threw out the rest.

Too bad...if they had been really good we would have had another excuse to head cross country to Disneyland again. Instead we'll just head back to WDW and have some beignets at POFQ. YUM! :thumbsup2

Just curious - if I oven bake the fries, how do I get the spice/cheese mixture to stick? Should I lightly coat them with oil or try to find an oil spray (like pam).
