We have had mixed luck getting Poly standard rooms with AP discounts. Once it was easy, once it took some work and checking back for cancellations (that was last year), and once we couldn't get it at all, so we took the BoardWalk as a second choice. The good news is that you can check to see what's available
before you buy your APs, then make your decision. Depending on the length of your trip, the discount may pay for your AP.
The Polynesian is a wonderful resort for spending time with your loved one. The beach with the view of the MK can't be beat, either in the afternoon or the evening for fireworks ... with a drink and a hammock and you feel like you're a million miles from the real world. Plus you can hop the monorail to explore the other resorts too. Monorail access is a real plus!
The only downside is lack of meal options within the resort, especially during
free dining periods. Captain Cook's is OK but very limited, and you can get appetizers at the bar or sushi at the coffee cart in the evenings. However, Ohana is next to impossible to get into without reservations, and the Kona, although good, is hit-and-miss for wait times. We ended up eating at the Contemorary and GF a few times last year because we couldn't get in anywhere at the Poly. It was no biggie though, we called Disney Dining first to check what was availabile, and we enjoyed visiting the other resorts. It helps to be flexible, or to have your ADRs already in hand.
If the dining issue doesn't worry you, then go for it! You will always wonder until you do, and if you can get that AP rate un August, you will never find it cheaper. We love the Poly and try to visit at least once every trip, whether we're staying there or not. It's so relaxing and feels like home away from home.
