Poly to EPCOT for breakfast.

We have a 8 A.M. reservation at GG and staying at the Poly, EPCOT opens at 9 A.M. Is there be a bus to get us to EPCOT?

Getting to Epcot from the MK resorts pre-opening has always been a gray area. I would suggest going down to the bus stop and seeing whether there is an Epcot bus showing on the departures board, or if there's a greeter at the bus stop you can ask them. If not, walk to the porte cochere and get an Uber, Lyft, or taxi.

Don't trust the resort staff; they're often misinformed on transportation operations. The greeters at the bus stop are not resort staff; they work for Transportation.
 
What Joel said above, you can also,always walk to the TTC and get the Epcot Monorail/Bus (whichever is running). A bus from the poly isn't guaranteed at all.

So there should be a bus running from TTC to Epcot at 7:30 in the morning? Monorail would not start til 8 A.M. correct?
 

For an 8am ADR, at GG, I would plan on leaving the Polynesian by 7, not 7:30. Early morning buses tend to run less frequently than the later buses. So, if you arrive at 7:25 and the bus to Epcot is just leaving, you may not see another one until 7:45-7:50. Then, it's going to take you about 10 mins to walk from the bus stops to security and get through. Then, up to another 10 mins to walk to GG! You need to leave an hour....to be safe and unrushed!!!
I would actually ask a bus driver the day before you want to go. They're the ones who have the best info. If there is any doubt a bus might not be there at 7? I would take a cab to Epcot...either the front gate or the Beach Club and use the Intl Gateway to enter.

Normally I would agree with that, but even when I was driving mornings, and I made an effort to find out, I could never get consistent answers on pre-opening travel from the monorail resorts to Epcot.

I would add to Zacaglin's advice that if you go to TTC and the monorail is not running, you should go to the Bus Info booth, and if they're not helpful, ask for a manager. On more than one occasion, I saw a bus specially dispatched or a van ride given to get a Guest to Epcot.

There definitely will be some form of Disney transportation available from the TTC to Epcot at that time. It might be a monorail. It might be a bus. I'd recommend getting there from the Poly at about 7:15 and consulting with a Cast Member. The worst-case scenario is you grab a cab or Uber from there, but I don't think that will be necessary.
