We are going me, my wife and a cousin disable next september to WDW. We are thinking in stay at Poly or Boardwalk. Which do you think best to stay in terms of space and convenience? Also consider that we will go more times in the Epcot, 'cause will be the Food & Wine Festival.
My cousin will use scooter and needs roll-in shower. Does anyone have some experience in these resorts with these needs?

You can't beat BW for being close to EPCOT.

I have not stayed at either of these resorts, but I would recommend that you stay at BW because the last time I stayed at a Monorail resort, in early December, the Monorail was down a portion of every day. That made transportation using my ECV a nightmare.

Staying at Boardwalk definitely makes sense if you plan on being in EPCOT most of the time. Your cousin can use the scooter and if the rest of you don't mind you can walk right over. It's nice to not have to worry about using Disney transportation. If you don't mind a farther walk, you can also walk to DHS too.

I would certainly recommend Board Walk. It is very easily accessible to Epcot, either by boat or a very short walk. We have always been very happy with the rooms with a roll-in shower.
