I hate to say this, but in March we were at the Polynesian and did the Luau one night. When I initially made reservations, I specified that I was a vegan and they said no problem. I was impressed because the chef called me up the week before our trip and gave me several options, I chose the Vegetable CousCous. When the night of the Luau arrived I was very exicted, the weather was great and I was already assured of an animal-friendly meal. The coconut bread they bring before dinner isn't vegan and there were no alternatives available, the appetizers weren't vegan, so everyone else is eating coconut bread and skewered meat and I get a tossed salad (iceberg lettuce no less). I was thankful when to entree arrived, it was vegetable couscous, but it wasn't all that great. The desserts were, once again non-vegan, so they brought me some pineapple. I wouldn't have complained if the price hadn't been so high, but for the food I got...it wasn't worth it. Especially when other restaurants, California Grill, Boma, Flying Fish Cafe all make an extra effort to satisfy vegetarian diners. When you call for your tickets, speak to the chef and make sure acceptable alternatives to ALL the course are pre-arranged.
Hope this helps!
