Yum! We make ours with a cream cheese-cheddar-garlic/chive/scallion mixture. I like cheddar in there, but I definitely like the cream cheese to be more prominent. We actually grill ours (we have a little grill pan specifically for poppers, so they don't have the breading on them & aren't fried. They get nice and soft and smoky, with the cheese melted inside. (I tell myself they're much healthier that way, lol).
