You asked for recipes, so here's DH's supreme "Stuffed French Toast"
First make your french toast batter; Dh gets all gourmet here and adds vanilla and nutmeg to his.

He uses sliced french bread, not too thick. Next he makes a compote of whatever fruit is in season (last weekend it was fresh huckleberries) by cooking them with sugar and water and a little lemon juice till they are almost jam-like. Next he mixes up Philadelphila cream cheese with a little sugar and a couple of spoonfulls of the compote. Now make a sandwich out of two pieces of the bread, lliberally filled with the cream cheese mixture. Soak the whole sandwich in the french toast batter, and cook on a griddle. You have to cook this for a bit longer than normal french toast, so make sure your heat isn't too high or they will burn before the insides are cooked. Serve with a dusting of powdered sugar, a little butter, and topped with the fresh hot compote. SOOOO good. But really filling too, you won't eat again till dinner.
