I am new at all this, so this may be a dumb question, but I will ask anyway. I have read that many people do day by day reservations when they want something specific. Suppose we want to stay at BCV and we book at our home resort (AKV) at the 11 month as a back up. At the 7 month window if we wanted to try to do a day by day reservation for BCV, would we need to have enough points to cover both reservations because we are not cancelling AKV until we complete all days of our BCV reservation?

You could certainly do that if you have enough points.

My guess is that most people don't have enough points in the UY to do that, so in fact they cancel (in your example) one night at AKV and then book one night at BCV with those points from the cancelled night at AKV.

There have been some instances where the first step (cancellation) was completed and the room that was available at the second resort disappeared from availability in the 30 seconds before it could be booked. It is rare, but it has happened.

Also possible is that some days will not be available and you could end up with a five night trip that looks like BCV-BCV-AKV-BCV-AKV or something like that. You would then waitlist your two nights and hope they come through.

It does work better if you have enough points to hold both reservations but there are ways to take advantage even if you don't. You could change one day at a time if you don't have any extra points. Even if you have enough points to hold weekdays at the 11 month window while booking weekdays at the 7 month window, you can still take advantage of this method since weekdays tend to be much easier to book for most situations.
