POFQ Beignets

Okay, not sure if this is the right place to post this, but does anyone know how to make the Beignets you get at POFQ? We stayed there on our Honeymoon 12yrs ago and our Anniversary is coming up and I'd love to surprise my husband and make them.

I think I have seen a mix for it in the grocery store but haven't tried it. I am a little nervous frying stuff since I don't have a fryer.

Here is a very easy way...get Pillsbury biscuits, the plain cheap kind...flatten the heck out of them and then deep fry them...dust with powdered sugar...I make them all the time.

I know, I have the same problem. I don't have a fryer either.

I'll try that. Do you fry them in a fryer or skillet/pan?

I use my dutch oven and fill it 3/4 of the way up with oil and heat it to med high and they come out just like the ones at POFQ

I have used the mix from Cafe Du Monde. You can order it online.

You don't need a fryer.. but an oil thermometer is VERY helpful. If the oil is too hot, they will burn and be raw on the inside. If too cold, they will be greasy.

I have been known to use a plain oil stockpot.

Beignets

Port Orleans French Quarter


Ingredients

1 pack dry yeast
1/2 cup sugar
2 eggs
7 cups flour
1 1/2 cups warm water
1 tsp Salt
1 cup undiluted evaporated milk
1/4 cup soft shortening oil, for frying
Confectioner's sugar

Method

In a large bowl, sprinkle yeast over water, stir to dissolve. Add sugar, salt, eggs, and milk. Blend with rotary beater. Add 4 cups of the flour. Cover and chill overnight. Roll out on floured board to 1/8" thickness. Cut into 2 1/2" squares. Deep fry at 360 degrees 2-3 minutes or until lightly browned on both sides. Drain on paper towels. Sprinkle heavily with confectioner's sugar. Makes about 5 dozen.

NOTE: Dough keeps well in refrigerator for several days. Cover bowl with plastic wrap and punch down occasionally.

Huh.. they are a yeasted dough? I've only ever used chemical levening (aka Baking Soda)

wonder which is "traditional" ? I've never had the POFQ Beignets but this looks like a "donut" recipe to me.
