I go nearly every Saturday night. That's definitely the most popular night followed by Fridays and Thursdays. I think all the clubs are fun!
The best club will depend on what kind of music you like. The single-club ticket is $9.95 but the all club ticket is $20.95. For about $5 more you can use your all-club ticket for multiple nights during your stay which makes the cost per night VERY reasonable. Inquire at the ticket window.
I head to PI every trip now after some folks around here hooked me on the Adventurer's Club. Don't usually go anywhere else. A Comedy Warehouse show now and then, but it's pretty much the AC. Even the night of TS Ernesto, I was there.
A big change if you haven't been in a while is that anyone can walk through/shop/etc at PI. You get a ticket if you want to go into any of the clubs though.
When I say mature I don't mean retirement age. But is there a club that is better for middle age people? I don't want to end up in a club with a bunch of 20 somethings and be really conspicous

Adventurer's Club attracts all ages. For dancing, 8-Traxx, the "70s/80s club," attracts more 30- and 40-somethings than Motion or Mannequins.
The age of the crowd at the Beach Club tends to vary with the band--some do recent covers, others perform more songs from the 70s/80s. I would place Frankie & the West End Boys (have they played here recently?) and the Leonard Brothers in that latter category.
Motion by far has the youngest crowds because they accept 18+ and the music is Top 40. I believe the other clubs usually have a pretty good age mix, at least on the weekends. If I had to say which club had the oldest crowd overall it would be Rock'nRoll Beach Club.

Gotta say I don't think that's a problem. As others have noted, the crowd is skewed in a certain direction at some clubs (Motion) but all ages wander in and out, I don't think you'll be uncomfortable. Find one that's got what you like, and wade right in.
I second the AC recommendation. For dance clubs, 8 Trax draws all ages with its mix of (too much, IMHO) 70s and 80s music. For pure sensory overload, there's Mannequins (my favorite along with AC.)
Is the West end stage and the live entertainment it offered gone? Allearsnet says its under refurbishment until late 2006 but no word on when or if it will reopen. It seems as if PI is slowly being phased out.
Well, PI as a name seems likely to continue for the foreseeable future. Disney definitely is changing the spirit of the place, though. (And not for the better, IMHO.)
I also read on another site that they're not having big-name entertainment for NYE this year, just DJs. The food seemed upgraded, but I can't help but wonder if Citywalk won't look like a better option this year.
