I'm not sure I understand you. You only use one option per person per night. You have 1 snack, 1 Quick service and 1 table service per person per night. You can use 2 table service option per person for the Hoop Dee Doo Revue.

The Signature Restaurants and Dinner Shows require 2 dinner credits per meal. Other table service restaurants use 1 dinner credit per meal.

The Signature Restaurants are:
Jiko
Flying Fish
California Grill
Citrico's
Narcoosee's
Artist Point
Yachtsman Steakhouse
Coral Reef Restaurant
Le Cellier
Hollywood Brown Derby

The Dinner Shows also require 2 dinner credits:
Hoop-de-Doo Revue
Spirit of Aloha Dinner Show
Mickey's Backyard BBQ
