LOL, it takes some time to get a grasp on the vastness and potential of things to do at disney... it also takes a few trips to realize that you likely cannot "do it all" and need to prioritize what matters to you and leave the rest for "next time" ('cause we all *know* there is going to be a NEXT TIME!

at your kids' ages, you're likely going to want to focus on the stuff that appeals to them, while enjoying yourself as well, 'cause like you said, it's your vacation too! have you ordered the planning dvd yet? if not, i highly recommend it...
as far as resorts go... the values are not that "bright" or gaudy... they were a pleasure to wake up to (now, the stitch wake up call is a whole 'nother story! LOL!)... the mods, however, are a bit more subdued...
i priced out POR which holds 5 (2 dbl beds and a daybed) for 7 nights in value season, 8 day tickets w/hopping but no water parks, including the cost of the dining plan = $3150
the POLY Garden View Room for same as above = $4600
two rooms at pop century (1A, 2C in one and 1A, 1 C in the other) = $3306
All Star Family Suite = $3424
personally, i'd go w/POR... not only because it's less expensive but because it's a lovely resort, w/beautiful grounds, some recreational options (boat rentals, bike rentals, horse/carriage ride), great transportation (including boat to downtown disney), a brand new food court and a fab sit-down restaurant... it's also got my kids favorite pool!
