Please help me with my plan.

So I am taking my 14 yo niece to WDW Aug 7th-14th. I arrive MCO at 9:30 am. Staying at POFQ. This is her 1st trip. I have been to the World over 50X but, for some reason I can not make a plan. I am nervous about the crowds an heat I am an off season person. This is what I have so far and I am not sure I am happy with it.
Tues 7th (arrival day) Epcot 4:30 ressies Via Napoli
Wed 8th MK 6:05 ressie CP
Thurs 9th HS 4:25 Primetime Cafe Fantasmic 9pm
Fri 10th AK Tusker 5pm (thinking of cancelling) then to MK for EMH
Then no thoughts ugh!!
Anyone have some ideas? I may do a waterpark for half the day. I would like to be at rope drop for MK and HS at least once.
I am just lost, I want this to be as magical as possible as she has had a very bad year...Pixie Dust please

Usually when we PLAN... we just make reservations for meals...plan to spend the day either in that park or at least around the time of our meals. We never check the calendar to see the crowd levels-I know that alot of people do. You seem to have a plan-thats a good start-we go with the flow & since this will be a treat for you & your niece she'll enjoy the time spent with you and being there!!!
