My two cents is add the extra day at Disneyland and definitely use the park hopper option. This will also give you time for more in park dining. If you can, plan a pre Park opening reservation and enjoy walking down Main Street without the crowds.

Also the drive from or to San Diego takes time. I can't imagine doing it on a bus and losing the option to come and go on our own timetable. If possible rent a car.

Most of all, have a magical trip and roll with it once you arrive. Plans are mostly made so they can be changed

It isn't unusual for fireworks to get cancelled at DL (usually because of winds speeds at higher elevations), so try to see the show earlier in your stay. That way, if the show gets cancelled, you still have more chances to try again. If you leave the show until your last night and it gets cancelled, that will be a disappointing note to end your trip.
