Please Help a Newbie with PSs

My family and I are going to WDW Feb 7th - 13th 2005. We are me, DH and DS (3). We are staying concierge at AKL Feb 7th - 10th and then switching to the Poly Feb 10th - 13th. We currently have the following days tentatively planned at each park. I have noted the PSs we have made so far (not much I know). I am looking for some advice on other PSs to make, and potentially times are well - this is our first trip and I am a bit lost. Thanks!!

Monday - arrive around noon at AKL, no plans
Tuesday - AK with breakfast at Tusker House (via Sunrise Safari at AKL)
Wednesday - MGM - no plans
Thursday (switch to Poly day) - Epcot, no plans
Friday - MK - CP character brekkie at 8:30am, other than that no plans
Saturday - MK - no plans, except Illumination cruise at 8pm (it's DSs b'day)

Any suggestions would be greatly appreciated!!
 
Boma at AKL is really great. We are not buffet goers, but this is not your typical buffet. So much variety, very good food and wonderful desserts!!
Le Cellier at Epcot WS is a great place for dinner. Cheese soup, pretzel breadsticks and filet mignon are wonderful!! Also Le Chefs in France!!
We love the Kona Cafe and O'Hanas at the Poly. These are a few of our favorites, hope it helps!! :blush:
 
For your MK day, I would suggest Liberty Tree Tavern. They have wonderful for lunch and dinner. At diiner it is a character meal, but lunch is a menu. We like going at lunch. Their hanburgers are very good as is the turkey.

One evening, you might enjoy going to the Boardwalk. Spoodle's is a great place to eat and they have a nice kids' menu. After eating, you can rent a surry bike and pedal around the Boardwalk. Your little one can sit in the front and ring the bell!
 

Here's another vote for Liberty Tree Tavern. We ate there for the first time in August, and will be back in a few days for dd's birthday. Chef Mickey's is fun, lots going on, bright colors to look at, great character interaction. Also, at MGM we always go to 50's Prime Time. If you do, make sure you ask for Auntie Claire, she's the best!
