Yep! Single rider lines are your friend.
For us, since DD was a tall 5 year old, and DH doesn't ride roller coasters she and I stayed behind and rode the Mountains etc one day, and then met DH and DS for dinner in Epcot. Most days though, we all had a nap or a swim, honestly, the adults needed it as much as the kids! This was the days of the old fast passes, so we would gather them in the morning, and use them in the afternoon. We usually ate QS lunch in the parks about 12:30 and then headed back afterwards for a rest. That put us at the resort at about the 1:30 mark and headed back to the parks around 4ish, enough time for a few rides before dinner.
If your DD commonly stroller naps now, you'll probably be fine, but if not, it will be tough. There is a lot of stimulation! DS was right at the point of dropping naps too. Our final day at MK we tried an all day, but he wouldn't nap in his stroller and was pretty grumpy before the end of the day. We did 11 days, including 7 park days our first trip and managed do everything we wanted without killing ourselves (or each other), but we went in January, I don't know how much more crowded it will be this trip.
