Planning what park, what day....

Hello- our first trip in 7 years this November with the whole family, including Grandkids! I'm learning lots about Genie+ and everything else that's different, which is a lot! On most of our previous trips, we used crowd calenders for "green parks", with a lot of success. My question is this, I still see crowd calenders on multiple sites, but since crowds will definitely be larger the week of Tgiving, does it really matter? With the MVMCP dates coming out today, that has been helpful in determining our 2 MK days, one on a day party day, the other on a non-party day so we can do Fireworks that night...not attending the party at all. But for the other parks, the crowds seem predictably high no matter what. I'm just feeling like what park is "green" or not probably doesn't matter. Any thoughts or advice?
 
Festival of the Holidays at Epcot will start AFTER TG, so fi you'd like to see the Candlelight Processional, wait until after TG to go there.
