Definitely contact your EM to set up a menu tasting. The planning session does take a few hours. When we did ours, we met with the entertainment coordinator, florist, had a cake tasting, picked linens, table centerpieces, cake style etc. This was done at Frank's. Then we went to the main kitchen at Epcot and spent a couple hours tasting our potential appetizers and menu options. You meet with the chef and discuss what you like and don't like, they were willing to work with you to get the dishes to your taste (at least that was our experience). You'll need to have your EM set up the tasting in advance. This requires you to have your reception site set so that they can take you to the appropriate kitchen. You'll also give your EM an idea of what appetizers and main course dishes you may want to have at the reception so that they can prepare them for the tasting. Good luck planning!
